The grapes are selected by hand before being de-stemmed, pressed and fermented in stainless steel tanks. At a certain density, the must is tanked off to complete fermentation in oak barrels. Post-fermentation, half the wine is aged on lees for 2 months to add complexity before the final blending and bottling.
A flinty, mineral nose with hints of apple and white flowers leads onto a rich palate which is fresh, lively, saline and mineral-like.
