A 4th generation vigneron, David Pehu Simonet is an astute, passionate and thoughtful wine maker. He produces 4000 cases annually from 9 hectares which are located in 6 different Grand Cru villages. His goal is to make champagnes that reflect the village and even the plot where the grapes come from.
Pale gold in colour with a slightly briochy nose, lush flavours of apple, mango and guava abound with a well-balanced acidity. The palate is dry but not bone dry. This is pure polished vibrancy in a glass!
