Alain and Jerome Pabiot are the 5th generation wine growers at Domaine des Fines Caillottes. Their winery is on the other side of the Loire from Sancerre. The domaine covers 29 hectares and is situated on the best terroirs in the Pouilly-Fumé region. It is made up of 30 parcels spread over 5 district areas within the Pouilly-Fumé appellation. Located on a variety of terroirs, usually dry limestone, the “caillottes” are a large concentration of white limestone pebbles.
A vivid light yellow, this has endearing notes of ultra-ripe exotic and citrus fruits. The palate is suave, fleshy and saline with traces of lychee, pineapple and orange. It is profound and delicious.
